Strawberry Banana Muffins

Mr. RWB does not eat enough fruits and veggies. As a way to encourage them as snacks I place strawberries, apples, grapes, carrots and other easy to snack on items at eye level in the fridge. There are also usually some bananas on the counter near the coffee pot and he’s usually pretty good about grabbing them on the way to work…Occasionally I end up with some really ripe banana stragglers and a few leftover strawberries. Recently he made a request for a new breakfast muffin so voila! Strawberry and banana muffins! I hate to waste things and love quick breads. And this one is really quick!


1 really ripe banana

½ cup of strawberries

1 tsp. vanilla

1 ½ cup of Bisquick

1 egg

1/4 cup of sugar


1. Pre-heat oven to 375 degrees and add cupcake liners to a muffin pan.

2. Mash banana  and strawberries until smooth.straawberry banana muffins fruit squish

3. Place all ingredients in a medium bowl and still until well mixed.strawberry banana muffin batter

4. Fill cupcake liners 2/3 full and bake at 375 for 15 – 20 minutes or until tooth pick comes out clean.strawberry banana muffins prebake
