This is my third month to participate the Secret Recipe Swap. So far it’s been a blast. I love cruising others’ blogs, seeing awesome photos and getting ideas. There are always way more recipes I’d like to try than I have time and this month is no exception. Especially in the context of our 30 day challenge. .. Sugar Dish Me was no exception!

This tasty blog is run by Heather from a small town in North Carolina. Like me she loves coffee and chocolate and believes everything is better with a cookie!

I ended up going with the This Salad’s a Winner and since this was made during the weekend I was home from working in Chicago, there are some differences. The recipe doesn’t call for any measurements (totally my speed!)  Veggies, chicken and light vinaigrette…Mr. RWB added this to the must make again list!

So here it goes:

Chop veggies: cabbage, spinach, red and green bell peppers, cucumber, cilantro and broccoli

In a large bowl, add Rotel tomatoes and green chilies, cooked chicken, cumin, lime juice, garlic powder, red wine vinegar and olive oil. Toss and serve.

 It’s really good the next day!

    Hi, Melissa! I had to go back through my archives for this– I’d forgotten all about it! Mine was definitely a salad with a southwest flair and I love your twist with all the different veggies and how you worked around the salsa & sour cream. Ro-tel was a super good call– fresh pico is really best when tomatoes are in season! Thanks so much for your kind words– glad we got to swap recipes!
