Easy Chicken and Quinoa Soup


I love soup. It’s like a warm hug or good phone call with a friend. Apparently not everyone appreciates soup at 100 degrees like I do…(my husband).  Now that it’s a little cooler I can get away with making a pot of soup and then eating on it all week. I love meals that I can make once and not have to worry every night what to have for dinner.

What’s even better is when I make something like Slow cooker chicken that I can transform into something else – Slow cooker chicken and quinoa!

I love quinoa! It’s actually a seed that tastes like a grain and provides great protein. It really makes this dish. And the best part about this soup; just set it and forget it!Then enjoy the sunset…


2 – 3 chicken breasts (used left over slow cooker chicken)

¼ onion, diced

2 cloves of garlic, minced

½ red bell pepper, diced

½ green bell pepper, diced

1 -1 ½ cups of quinoa

1 can of diced tomatoes

2 cups of water

1 tbsp. honey (optional)

¼ cup of BBQ sauce

Salt and pepper to taste



  1. Place all items in a slow cooker on low or high.
  2. Leave for at least 1 ½ (high) up to 6 hours (on low).
  3. Serve hot.
