15 Minute Marinade


The sinus infection monster strikes again…Normally it only rears its head in the spring or the fall. When we moved in February, I was certain that I would end up sick within the first 2 months. Lots of new allergens! But I didn’t, so when we hit summer I thought we were home free. Much to my dismay people in the office have been sick and coming to work. Guess it was just my turn…

With me sick and my hubby working on his new business, meals this week have been tough. Thank goodness I made good food this weekend but you can only eat leftovers so many times. After my time in Cali, I try to buy local or at least in season (read: on sale) which means grilled chicken, corn and fresh green beans/salad is on the menu a lot in the summer. This meal was no exception but instead of barbeque chicken I decided to try a quick and easy marinade.

It takes less than 5 minutes to make and 10 minutes to soak unless you have monster pieces of chicken like we did (nearly 1 lb. a piece!). If they are big, marinate for 20 – 30 minutes. So easy it can be made even when sick. Just have the hubby man the grill!


4 Chicken breasts

1/3 cup of olive oil (used ¼ cup EVOO and 1 ½ tbsp. Texas Mesquite Olive Oil)

2 tbsp. red wine vinegar or 1 lemon, juiced

2 – 3 cloves of garlic, minced

1 tsp. Oregano

½ tsp. Cumin

1 tsp. Greek seasoning

1 handful fresh Rosemary, chopped

Salt and Pepper



  1. Put all ingredients into a bowl and stir.
  2. Place a piece of chicken in the bowl and cover with marinade. Remove and place back onto package. Repeat for all chicken.
  3. Pour any remaining marinade onto chicken. All spices should be on the chicken.
  4. Let sit for 10 to 30 minutes depending on the size of the chicken breasts.
  5. Grill and enjoy!
