A twist on the traditional Gingerbread cookie.
  • ½ cup butter (1 stick), softened
  • 1 egg
  • ¾ cup light brown sugar
  • ½ cup molasses
  • 2 tsp. vanilla
  • 2 tsp. cinnamon
  • 1 tsp. cloves
  • 1 tbsp. ginger
  • 1½ tsp. baking powder
  • ¾ tsp. baking soda
  • Sprinkle of salt
  • 3 cups of flour
  • 1 cup powdered sugar
  • ½ lemon, juiced
  1. In a large bowl, beat butter, brown sugar and egg until well mixed.
  2. Add molasses, vanilla, seasonings, baking soda and baking powder and beat until well mixed.
  3. Slowly add in flour until completely incorporated.
  4. Cover with plastic wrap and let sit at least 2 hours (or if you're impatient an hour!)
  5. Preheat oven to 350 degrees and grease the cookie sheet.
  6. Take a fist size piece of dough and roll out ¼ inch thick.
  7. Using the cookie cutter, cut out men and place on cookie sheet.
  8. Bake for 8 minutes and slightly cool.
  9. While the cookies are baking, add powdered sugar and lemon juice in a bowl and stir.
  10. Using a pastry brush, paint glaze on cookies while still warm and decorate!
