Hooray! Fall is here!
After a fun trip to Italy (pictures to come), back to work I went, watched a HOT football game and headed to Chicago. The weather was perfect! Rainy and cool the week put me in the mood for fall. I love all the pumpkin spice flavored items: candy corn, M&Ms and marshmallows! (Yes I bought all 3.) Unfortunately the Residence Inn doesn’t provide the best baking environment.
Good news these cookies don’t require an oven, just 4 ingredients and a microwave.
5 cups of cornflakes
2 tbsp. butter
1 – 8 oz. package of pumpkin spice marshmallows (well almost…I couldn’t resist!)
1/2 cup of chocolate chunks
Ground cinnamon (optional)
1. Place marshmallows and butter in a microwavable glass bowl. Heat in microwave on high for 1 minute or until marshmallows swell. Stir well.
2. Place cornflakes in a large metal bowl. Pour melted marshmallow over cereal and stir.
4. Grease hands with non-stick spray and roll into balls. Place on waxed paper. Sprinkle with cinnamon, optional. Allow several hours for the cookies to firm up. Keep in an airtight container.
