Mango Mojito Popsicles

More mangos! It appears that mango season is going really well this year.

Guess what? Mr. RWB ordered me a new toy…a popsicle maker! I’m so excited! Recently when I was shopping Sprouts, they were doing a tasting for a new local Austin popsicle company: local fruit, local coffee and local herbs. They were awesome! My favorites were their watermelon mint flavor and coffee flavor. Knowing Mr. RWB I decided to get the coffee. It was a big hit but in looking at the ingredients, yes I could pronounce them all, it occurred to me that I should be able to make yummy popsicles.

First off, the kit says it takes an hour…it doesn’t. Even after 3 hours neither type were done (made a coffee one, coming soon!)

Second, with quality fruit no additional sugar is needed. These only contain 5 ingredients.

Third, these popsicles contain alcohol (1 ounce for 6 pops).

They were amazing and perfect on a hot day!

Mango mojito popsicle

Ingredients (makes 6 pops):

1 medium sized mango, peeled and pit removed

1 lime, juiced

5 – 6 mint leaves

1 oz. coconut rum

½ cup of water


  1. Place mango, mint, lime juice, rum and water into a blender and pulse until smooth.
  2. Pour into popsicle molds and freeze for several hours, preferably overnight.
  3. Enjoy!mango mojito bite
