Mojito Fruit Salad

Mojitos are such a perfect summertime drink. Mint grows great in our backyard in Austin.  Lucky me! Unfortunately it grows a little too well and has to be cut back quite often. That means I get to think up new ways of using it!

I’ve been toying with mango and strawberry versions of the mojito but am without a strainer here in Chicago. Then it hit me…just add the lime, mint and rum to the fruit. Kind of like the drunkin’ watermelons but way better!

I love this because it’s simple, tasty and refreshing. There are tons of possibilities with the fruit combo as well. I used what was in my fridge but really most fruit would taste great.

This recipe is for adults only!

Ingredients:

½ – ¾ lb. strawberries, hulled and chopped

1 mango, peeled and diced

¼ cantaloupe, peeled and diced

¼ honeydew melon, peeled and diced

½ lb watermelon, diced

2 limes, juiced and zested (optional)

Handful of mint, chiffonade (cut in small ribbons)

2 oz. rum (or more if you like!)

Instructions:

  1. Place all fruit in a medium bowl. Add lime juice, mint and rum and stir well.
  2. Let sit for a half hour for the flavors to meld or enjoy immediately!Mojito fruit 2
