Mangoes have been plentiful this year in both Chicago and Austin. I can’t believe how long they’ve been around and at great prices! Thus far I’ve made mango chicken with vinaigrette, cookies (coming soon), and now salsa!
Easy, fresh and tasty this is perfect with migas, on chips or with a spoon. This recipe was made with the hot Rotel tomatoes and green chilies as well as a serrano pepper…BEWARE that makes it really hot! But the sweetness of the mango is first and the heat comes on after. It’s complex , tasty and leaves you wanting more…even if it sends you running for water!
1 mango, diced
1 can of Rotel tomatoes and green chilies (hot for really spicy, regular for a little spice or mild)
1/4 medium red onion, diced
1 Serrano pepper
1 handful of cilantro
