Spring has finally arrived in Chicago and all I can say is thank goodness! Spring means patio time, half marathons and MOJITOS! The mint in my backyard in Austin is going crazy so Mr. RWB brought me two bags full of fresh mint when he visited. This refreshing drink is perfect for spring or summer and super easy to make. I bought some lovely mangos at the fruit stand today…perhaps I’ll try a Mango one this week!
Ingredients:
Handful of mint
Pinch of sugar
1 shot of rum
1/2 lime
Sprite Zero
Ice
Instructions:
1. Place mint, sugar and rum in the bottom of a glass. Using a spoon or other stick, muddle the mint and sugar.
2. Juice lime into cup, add ice and fill with Sprite zero.
3. Garnish with lime slice and straw. Enjoy!
