It’s that time again, Surprise Recipe Swap! This month I was paired with Curious Cuisiniere and had a really hard time picking just one recipe. Actually had planned on making half a dozen this month but ended up sick so they’re bookmarked! Sarah is a foodie out of Wisconsin that does awesome things with dishes from all over the world. I can’t wait to try her Grandmother’s croissant recipe and an awesome chocolate macaroon.
The recipe I went with was an easy tasty beer bread. This became the clear favorite after receiving an awesome box of my new favorite jalapenos. Campbell Gardens Peppers found me on Facebook and have some awesome sweet and hot pickled jalapenos. I’ve never had anything like this before but have already consumed half a jar…yes they are that good!
This was a great recipe and will be making it again!
3 cups flour
3 tsp. baking powder
2 tsp. sugar
1/2 tsp. salt
1 tbsp. jalapenos, diced (used 2 tbsp.)
1/2 cup sharp cheddar cheese, crumbled (used 1/2 cup Mexican cheese blend plus more for sprinkling)
1 (12 oz) beer (used Leinenkugel’s Summer Shandy)
1. Preheat oven to 375°F.
2. Mix all dry ingredients in a large mixing bowl. Sir in jalapenos and cheddar cheese. Add beer (slowly) and mix well. Transfer to a greased loaf pan (or 3 mini pans if Wal-mart is out of the regular size pans). Sprinkle tops with cheese.
