Now on to the recipe, Mrs. T’s Meatloaf!
Well, my allergies have struck again. I absentmindedly left out a really important ingredient, the egg. Fortunately by putting the meatloaf in a big muffin pan a portion control technique), it didn’t completely fall apart.
I think next time I’ll add a few more spices but this is a great basic meatloaf recipe that doesn’t use breadcrumbs.
Original recipe from No Reason Necessary with my comments in parenthesis
1 1/2 pounds ground beef, not too lean (Used 1 lb. ground turkey)
1 cup tomato sauce or milk (Used 3/4 cup of milk)
3/4 cup quick oats
1 onion, chopped (Used 1/2 onion and was a bit much)
1 egg (Whoops left this out)
1 Tablespoon Worcestershire sauce*, optional
1 teaspoon salt
1/4 teaspoon pepper (Used white pepper)
Instructions: Combine all ingredients thoroughly; mix well. Shape into a loaf approximately 8×4 inches; place loaf in a large shallow baking pan and bake in preheated 350º oven for about 1 hour. (I put then in an over sized muffin pan and it cooked for 40 minutes until it had an internal temperature of 160 degrees.)
She likes to use gravy on the meatloaf but I grew up with a tomato based glaze. For the topping:1 can of tomato sauce, 1 tsp. of mustard, dash of hot sauce, 1/2 tsp of honey, 1/2 tsp. garlic powder, dash of cumin, paprika, salt and pepper. Stir all ingredients together and apply with 10 minutes left.
