In the time of sugar, sugar and more sugar, I thought it would be good to have a sugar free sweet and savory treat. As someone who can’t eat nuts, I can’t personally say how good they are but they seem to disappear.
This is one of the 16 recipes that were made for the Showers for the Homeless Ministry. We have a gentleman that is diabetic so I try to have something for him every week. Some recipes like zucchini bread or banana bread or scones require quite a bit re-work but others like this one are easy. This recipe can be made with or without sugar; it’s a 1 for 1 exchange.
So if you’re looking for an easy, tasty treat that won’t send you into sugar shock, these nuts could be just the thing. And they look great in a tin or on a tray next to the divinity. Even though I can’t eat nuts, I love making them because it makes the house smell so good!
Ingredients:
1 lb. mixed nuts
2 egg whites, slightly beaten
1 – 2 tsp. vanilla
1 – 2 tsp. cinnamon
2 – 3 tbsp. Splenda or other sweetener
¼ tsp. Additional spices per taste like nutmeg, cloves or allspice (I just use cinnamon)
Instructions:
- Heat oven to 350 degrees. Spray a cookie sheet with a lip with non-stick spray.
- Stir nuts, eggs and spices together in a medium bowl.
- Spread onto cookie sheet in a single layer.
- Bake at 350 degrees for 20 – 25 minutes or until nuts are completely dry and the whole house smells amazing!
