Kitchen Basics: How to Butterfly a Shrimp

Shrimp is a staple at our house and I’m always looking for new ways to prepare it. When an email came across featuring coconut shrimp, I had to give it a go. All the recipes in my collection called for butterfly shrimp. Since I had never butterflied a shrimp, Google came in handy. Apparently there are 2 different ways to butterfly a shrimp: top cut or underneath. After some trial and error, the easier and just as pretty version is to cut the top.

Start out by cleaning and shelling the shrimp, leaving on just the tail.

Take a knife and cut the top of the shrimp. Only cut half way down or it’ll end up being two half shrimp. It’s not as deep as you think…I had several split shrimp to prove it.

Once cut, split the shrimp and prepare.
